Okay okay, so you all want to know the secret behind our super popular, world-famous muffins! So in the spirit of Christmas – our gift to you is the recipe we work our magic from…..
3 cups S.R. flour (sifted)
1 cup caster sugar
150g white choc melts
1 cup milk
1/2 cup cream
125g butter (melted)
1 tsp vanilla essence
250g frozen mixed berries
Pre-heat oven to 180-200 degrees. Put muffin cases into muffin tin. Mix dry ingredients, add melted butter, milk, cream, egg and vanilla essence. Mix well for a few minutes. Fold berries into mixture (don’t overdo it!). Spoon into muffin cases. Cook for 20-25 mins. Check with skewer – if it comes out clean, it’s cooked 🙂
We have made these muffins with GF flour with no hassles. They are a little lighter and fluffier but still yummy.
Our muffins are best eaten together with a good coffee or strong tea on a sandy riverbank in the wilderness.
